Momento Paardeberg Grenache Noir is from a vineyard planted on granite. It’s fine-textured, pure and focused. Vibrant red fruit and crunchy tannins. Destemmed with 30% whole cluster into small fermentation tanks. 4 days of cold-soak prior to fermentation for colour and tannin extraction with 10 days maceration post-fermentation. After 4 weeks on the skins, the grapes are pressed and the wine is racked to old foudre for malolactic fermentation and maturation. No fining. Alc 13.04%
