Dainty Bess Extra Brut Cap Classique by Jane Ferreira-Eedes is from Chardonnay and Pinot Noir and spends 19 months on the lees. It’s refreshing, light and elegant. For added complexity, 17% of the Chardonnay is from the 2022 vintage. This portion was fermented in 600l Stockinginger barrels from Austria. The remaining 50& of the Chardonnay was fermented in concrete tanks. The Pinot Noir was whole-bunch pressed and the free-run juice was fermented in stainless steel tank. Pale salmon in colour. Nose full of bright citrus, intense raspberry, rose petal and a hit of spice. The palate is tangy and vibrant with a fine mousse and a refreshing, dry finish. (Jane’s notes)
