Journey to the Centre of the Universe Blanc Fume by Mark Stephens of Deep Rooted Wines is a low-sulphur wine. Fruit is from Sondagskloof, Stanford Foothills, and Klein River Lagoon. It was fermented naturally in 500L old French oak barrels and aged for 10 months on its lees before bottling. The nose offers subtle notes of lime, white peach, and blackcurrant. The palate is lean yet flavorful, with great fruit clarity, a good line of acidity, and a long, dry finish.
